The first thing I hear about baking is always something about how challenging it is. Oh contraire, I want to say. Baking can actually be quite easy; you just need to find the right recipes. You may be scared of kneading bread, but come on, you know how to pour flour and sugar into a bowl, right? Sometimes, that’s all you need to know in order to make a half-decent baked good—and sometimes, you need even less technical skill than that.
You’re a busy person. You try get to work early. You do favors for your friends. You sometimes go to the gym. Of course you don’t have a lot of time for a sit-down meal on a weekday morning. But at the same time, you deserve to start the day with a big ol’ pancake breakfast. Allow me to offer a compromise: pancake muffins. Pancake muffins offer all the flavor of a stack of pancakes with the on-the-go ease of a muffin.
A breakfast made from just-add-water pancake mix is probably always going to be fine. The pancakes can be kind of good (in a sugar rush-sort of way) if you pour on enough maple syrup, but that isn’t really saying much.
