There is no wrong answer for me when it comes to macaroni and cheese. It's great creamy stovetop-style, baked in a casserole, crafted from a frozen block or a blue box, scooped from a hot bar, forked from a tub at a barbecue joint, or all fancy and truffled at a high-end restaurant. It's also excellent at breakfast.
Having people over for brunch always sounds like such fun. I imagine waking up when the sun is just rising and doing a bit of yoga while the coffee brews. I’ll then start to whip up a meal: fluffy quiche and popovers, fruit salad of course, and maybe a quick bread or two. I’ll be sticking fresh dahlias in a vase when the doorbell rings at 11 a.m. on the dot and greet my friends with a glass of fizzy punch.
You’re a busy person. You try get to work early. You do favors for your friends. You sometimes go to the gym. Of course you don’t have a lot of time for a sit-down meal on a weekday morning. But at the same time, you deserve to start the day with a big ol’ pancake breakfast. Allow me to offer a compromise: pancake muffins. Pancake muffins offer all the flavor of a stack of pancakes with the on-the-go ease of a muffin.
