For an extra touch of flavor, top this dish with long Parmesan cheese curls created using a vegetable peeler.
Cut zucchini lengthwise in half, and cut into 1/4-inch-thick wedges about 1 1/2 inches long. Sprinkle wedges evenly with salt.
Sauté minced garlic in hot oil in a skillet over medium-high heat until lightly browned. Add zucchini, and cook, stirring occasionally, 8 to 10 minutes or until tender.
Pour Citrus-Herb Dressing over zucchini, tossing to coat. Garnish, if desired. Serve immediately.
Very good. Followed the recipe almost exactly. My husband even liked this, and zucchini is not one of his favorite vegetables. The citrus sauce is excellent.
