Made half-recipe this morning for brunch — quite happy with it.
We had a few leftover fresh mushrooms that I sliced and added with the squash and onion, and worked great. In fact, I’ll try to always do that.
Was concerned that the basil at the end wouldn’t offer enough herb enhancement for the flavor, but it was great!

This was excellent. I made a few changes: I used 4 eggs and 3/4 cup egg whites, and reduced butter to 1 Tbsp. and oil to 1/2 Tbsp. The end result was great and I highly recommend it.
This recipe is a throw together, fast meal, and even the kids love it! You could make it for breakfast, lunch, or dinner and it would still taste good! You could make it for a fancy meal or an everyday meal.
My wife is usually a real downer when it comes to trying new things. But this dish she loved. Used egg substitute.
