Welsh Rarebit, or Welsh Rabbit, is a traditional British dish that consists of melted cheese over toasted bread. As one reviewer says, "Add a slice of smoked (Salted) herring, Tobasco sauce, toast the muffins or Italian bread and try stop eating it!"

How to Make It

Step 1

Melt butter in a saucepan over low heat; add flour, whisking until smooth. Cook, whisking constantly, 2 to 3 minutes. Whisk in beer; cook, whisking constantly, 3 minutes.

Step 2

Stir in cheese and next 5 ingredients. Cook 3 to 4 minutes or just until cheese melts. Spoon over English muffins.

Step 3

Broil 5 1/2 inches from heat 30 seconds or until browned. Serve with tomato slices, if desired.

Step 4

Note: For testing purposes only, we used Sierra Nevada Pale Ale.

Good but it needed to be thinned out. Not as tasty as the Welsh Rarebit of years ago. Perhaps a different cheese was used. I thinned it out with 1% milk and just had it over toast. Easy recipe. Next time will try a different cheese.
