Agua fresca is a drink made by combining blended fruit, chopped fruit, water, and sugar, then letting the mixture macerate. This version is popular with both kids and adults. You can make it earlier in the day and keep it chilled until ready to serve on a hot summer day.
4 cups cubed seeded watermelon, divided
4 cups water
2 tablespoons sugar
2 tablespoons fresh lime juice
How to Make It
Finely chop 2 cups of watermelon, and set aside.
Place remaining 2 cups watermelon in a blender; process until smooth. Pour pureed watermelon through a sieve into a pitcher, and discard solids. Add water, sugar, and lime juice; stir until sugar dissolves. Stir in the chopped watermelon. Cover and chill at least 1 hour.

This recipe is OK, but the success of the drink really depends on the sweetness and flavor of the watermelon. I wanted to use up a so-so watermelon and needed less water and more sweetener because the watermelon flavor wasn't very intense. I'll make it again but will use a standard watermelon, not a mini melon or seedless melon next time. Also I made some with agave nectar instead of sugar and it tasted good plus dissolved easily.
Great standard recipe for agua fresca. I would use a bit of personal judgement regarding the level of sugar and lime juice--it may not have enough of either. I also recommend making and using simple syrup instead of sugar to ensure it is dissolved. (Just bring to a boil a one-to-one ratio of sugar and water and stir until dissolved and let cool.) Keep it in the refrigerator for a couple of weeks and use as needed.
