Warm Spinach Salad provides minimal effort and a tasty way to add greens to your meals.

How to Make It

Place spinach leaves in a large bowl. Heat a small skillet over medium-high heat. Add olive oil; swirl to coat. Add minced garlic and grape tomatoes; cook 1 minute, stirring constantly. Add vinegar, honey, pepper, and salt, stirring with a whisk. Add vinegar mixture to spinach; toss to coat.

Good, easy, simple. One minute in a skillet will not wilt and char the tomatoes as shown, but it's not that big a deal. This is a simple side dish useful for adding green to a meal and it works fine in that regard.

Not bad, just not quite there yet. I think it needed something like feta or goat cheese. And maybe dried cranberries instead of tomatoes? And maybe something crunchy like pine nuts? But it definitely has potential...I love the flavor of the vinaigrette. And I think I would like the spinach to be just a little more wilted, almost sautéed.
