I used roasted walnut oil.  Really nice flavors on this dressing.

Just made it but had to substitute wine vinegar with Apple cider vinegar and lemon with lime - small asian lime..also shallots with smaller red onion. And my husband and I finished every bit of the salad made from what I could find in the fridge ie julienne carrots, ,romaine lettuce, chinese parsley, tomatoes, cucumber, small red onion (again), raw walnuts and chopped garlic..Lastly added a hard boiled egg, quartered and placed on top of salad..glad i found this dressing. .Thank you..

Dressing is good enough to use on a simple mixed lettuce salad. Not too sweet, not too tangy! Brings out the flavors of the lettuces and would mesh well with pear, apple, and blue cheese. Also helps bring out nutty flavor in other dishes on the menu. Just be sure to mince the onion very fine, even grate it.
