This is an absolutely delicious salad. I did have trouble finding honey roasted cashews, but as necessity is the mother of invention, I created my own. Drizzzled with honey, stirred with brown sugar and toasted. That made them sticky, so I tossed with granulated sugar and they were great. Also soaked the apples in OJ to keep them fresh. I served this at a luncheon and it was a huge hit! Many requests for the recipe!
Made this tonight exactly as written, with the addition of a diced grilled chicken breast to make it an entree salad. It was fantastic. Next time, I'll chop the spinach, cheese and apples a bit more because it was hard to get the tiny cashews, celery and raisins in the same bite as the big apples and cheese shavings. The flavor combinations are something I know I will crave - may have it again tomorrow!
