How to Make It

Step 1

Pierce potatoes with a fork, and arrange in a circle on paper towels in microwave oven. Microwave at HIGH 10 minutes or until tender, rearranging potatoes after 5 minutes. Wrap in a towel; let stand 5 minutes. Peel and mash potatoes. Combine with milk and remaining ingredients.

Step 2

Place in a 1-quart casserole; cover and microwave on MEDIUM for 7 minutes or until thoroughly heated.

Was never a fan of holiday sweet potato casseroles until I found this recipe in Cooking Light and have been bringing it to family Thanksgiving ever since! My sister claims she'd rather have seconds of this instead of dessert. To dress it up, I pipe it through a pastry bag with extra large star tip to create beautiful individual servings in the casserole dish. Super easy to make ahead and reheat in oven or microwave. Thanks Cooking Light!

I really liked this for Thanksgiving. The vanilla was a little too strong for me, so I use 1 tablespoon instead of 2.

This is among our 2 our favorite sweet potato recipes-- it's so good with that burst of vanilla flavor, and almost too easy to make! I sprinkle a couple of tablespoons of chopped toasted pecans on top before serving.
