How to Make It
Coat a 13- x 9-inch glass or ceramic baking dish with cooking spray.
Combine popcorn, cereal, almonds, and apple chips in a large bowl.
Melt butter in a Dutch oven over medium-low. Add marshmallows, and cook, stirring constantly, until marshmallows melt and mixture is smooth, 2 to 3 minutes. Stir in food coloring, if desired. Remove Dutch oven from heat. Add popcorn mixture to marshmallow mixture, and stir until completely coated. Transfer to prepared dish, and spread into an even layer. Scatter sprinkles over top of mixture, pressing to adhere. Let stand until set, about 30 minutes. Cut into 12 bars.
Place white chocolate chips in a microwavable bowl. Microwave on medium power until melted, about 1 minute, stirring every 15 seconds. Spoon 1 rounded teaspoon of melted chocolate onto center of each bar; press 1 Bugles snack into chocolate. Let stand until chocolate sets, about 20 minutes. Store in an airtight container up to 5 days.
