Instructions Checklist
  • Combine all Maple Waffle Batter ingredients in a medium bowl, and whisk to combine. Mixture will be slightly lumpy.

  • Preheat Belgian waffle maker to medium-high setting. Lightly coat with cooking spray.

  • Place bacon on 2 sections of waffle iron. Pour 1/4 cup of the Maple Waffle Batter in each of 2 remaining waffle iron sections. Close waffle maker, and cook until waffles are done, about 3 minutes; transfer waffles to a wire rack. Flip bacon. Pour eggs into 2 empty waffle sections, sprinkle with salt and pepper, and close waffle maker. Cook until eggs and bacon are cooked through, 1 to 2 mintues. Transfer egg sections to a plate, and place cheese slice in between to melt. Transfer bacon to a plate lined with a paper towel. (If desired, cook bacon 1 to 2 more minutes to get extra crispy.)

  • Combine mayonnaise and mustard in a small bowl. Spread mayo mixture on each waffle. Top one waffle with arugula, cheesy eggs, tomato slices, bacon. Top with second waffle, sauce side down. Serve immediately.
