This is a staple for whenever we go to the mountains for hiking. Very tasty and filling- perfect for a break in between good, long walks. This is also a great way to use up any smoked turkey you may have (eg., from Thanksgiving). I make 2 substitutions: I sometimes use a bag of cole slaw instead of salad greens for an extra crunch; I spread some flavored cream cheese on the tortillas for extra flavor and to cut the dryness- french onion flavor or vegetable flavor works well.
I made these for a family get-together, and it was a huge hit. I served it with a savory tomato-cheddar bread pudding, veggie tray, and chips. Made them ahead of time, wrapped them with freezer wrap, and put them in an airtight container until the next day. Served them sliced on an angle with the paper still attached.
