You can also add sliced mushrooms to the pan with the onion and bell pepper. Serve with dill pickles and chips.

How to Make It

Step 1

Preheat oven to 375°.

Step 2

Melt butter in a large nonstick skillet over medium-high heat. Add onion and bell pepper; sauté 5 minutes or until tender. Stir in black pepper.

Step 3

Divide onion mixture and turkey evenly among bottom halves of rolls; top each serving with 1 cheese slice. Cover with top halves of rolls.

Step 4

Place sandwiches on a baking sheet. Bake at 375° for 5 minutes or until cheese melts.

These were awesome. So simple, but so good. The whole time I was preparing them, I kept thinking "now, why didn't I think of that?"

I really like this sandwich and I would make it again. I think it would be an everyday meal for perhaps lunch although we did have it for dinner. I had a summer slaw with this sandwich which worked well and was light too. I think the recipe did mention it but I did put horseradish on it and I thought that helped it out. My husband is picky. He did like this sandwich although again, he did think it was a lunch thing- but oh well, I am the one who has to dream all this cooking light.

Needed a change from the usual turkey sandwich. Added some spicy brown mustard and this was perfect!
