1/4 cup frozen apple juice concentrate, thawed and undiluted
1 tablespoon olive oil
1 tablespoon Dijon mustard
1 teaspoon dried thyme
1/2 teaspoon freshly ground pepper
12 red leaf lettuce leaves
How to Make It
Combine water, wild rice, and barley in a large saucepan; bring to a boil. Cover, reduce heat, and simmer 45 minutes or until rice and barley are tender. Drain. Add turkey and next 3 ingredients; toss well.
Combine vinegar and next 5 ingredients. Pour over rice mixture; toss well. Cover and chill 3 hours, stirring occasionally.
To serve, place 2 lettuce leaves on each of 6 plates. Spoon rice mixture over lettuce.
