How to Make It
Preheat oven to 375°F.
Heat a small sauté pan over medium-high heat. Add oil and swirl around to coat pan. Sauté carrot in hot oil for a couple of minutes or just until lightly browned. Pour carrots into a large mixing bowl. Add 1/4 cup cheese, 1/3 cup White BBQ Sauce, and next 4 ingredients to the bowl with the carrots; toss. Add turkey and egg, and mix gently just until ingredients are combined.
Scrape meatloaf mixture into an 8- x 4-inch loaf pan coated with cooking spray. Bake meatloaf at 375°F for 30 minutes. Remove meatloaf and increase oven temperature to 450°F.
Spread remaining 2 Tbsp. White BBQ Sauce over top of meatloaf and sprinkle with remaining 1/4 cup cheddar. Bake at 450°F for 10 – 15 minutes or until done and has reached 160 degrees on a meat thermometer. Let stand at room temperature at least 10 minutes. Cut into 8 slices and serve.
