How to Make It

Step 1

Combine first 6 ingredients in container of an electric blender. Cover and process until smooth, stopping once to scrape down sides. Cover and chill 1 hour.

Step 2

To serve, ladle 1 cup soup into each of 4 individual serving bowls; sprinkle each with 1 teaspoon toasted coconut.

If you like tropical fruit, this is a great summer soup. As is, it's very thick and creamy and IMO it serves well as a dessert. The cream of coconut is very sweet with the mango and cantaloupe so next time I may sub coconut milk for it.
