Ripe, meaty tomatoes star in this salad.
I often serve just sliced tomato and avocado - sometimes with cucumber slices too - as a side. This is a nice way to change it up a bit without making it much more difficult. Can't wait to use garden fresh tomatoes. Will make again for sure.
This is a great summer lunch salad. Watch out for the chipotle powder. We like hot so it was no problem for us, but for the less spicy hot inclined, use just a touch per serving. It adds wonderful flavor.
We served it on a bed of spinach with pics de gallo.
