Toss apple with lemon juice; set aside.
Combine thyme, salt, and pepper. Sprinkle over pork. Coat a large nonstick skillet with cooking spray, and place over medium heat. Add pork, and cook 3 minutes on each side or until done. Remove pork from pan; keep warm.
Add wine to pan; simmer 1 minute. Add apple, cherries, and next 4 ingredients. Cover and cook 6 minutes over low heat. Uncover and cook 1 to 2 minutes or until mixture is thick. Stir in butter. Serve over pork.
