Udon noodles often come with a seasoning packet. Simply discard it for this recipe.

How to Make It

Step 1

Cook noodles in boiling water for 3 minutes (omit seasoning packet, if included). Drain; rinse under cold water, and set aside.

Step 2

Combine lettuce and cabbage in a large bowl; toss well. Spread lettuce mixture over a large platter. Place noodles in center of platter on top of lettuce mixture. Arrange sweet potato, red bell pepper, green bell pepper, daikon, and bean sprouts around noodles in individual mounds over lettuce mixture.

Step 3

Drizzle Spicy Peanut Sauce over salad. Garnish with basil, cilantro, and mint, if desired.

Followed ingredient list except no sweet potato and prepped both carrot and radish.  Rather than keep the veg separate, used a Serious Eats tip to toss all veg together, then topped with the noodles & dressing.   Made a very large platter of salad BUT everything was eaten.  Served with CL's Thai shrimp cakes.

This is the best tasting recipe of any recipe I have ever tried on the internet. The sauce is outstanding. I would recommend this recipe to anyone.

I used egg lo mein noodles instead of udon. Super delicious, definitely a nice way to add variety if you're tired of plain old salads
