In Mexico, a refresco is typically a very sweet bottled soda. Take the concept of a refreshing fizzy drink to a more delicious place with this tall, cooling watermelon cocktail--a less sweet soda with a kick.

How to Make It

Place watermelon in a blender; process until smooth. Pour pureed watermelon into a sieve over a large bowl, pressing with the back of a spoon to extract as much liquid as possible; discard solids. Combine 3 cups watermelon juice, tequila, Triple Sec, lime juice, and salt in a pitcher; stir with a whisk. Gently stir in club soda. Serve over ice with lime wedges.

Great summer cocktail! Not too sweet--doesn't taste strongly of alcohol. Very satisfying & refreshing cocktail. Margarita lovers might not find this sweet enough but my husband and I loved it! I found Tsamma brand fresh watermelon juice at The Fresh Market & used that. 3 cups (2- 24oz bottles) was perfect.

There wasn't much flavor or fizz to this, I added the full amount of club soda and then added some diet 7-up after pouring over ice. It helped, but think this one still Ned's work!

Made this on Memorial Day exactly as written and it was delicious! I liked the bubbles but my husband preferred it without the club soda. I made a variation 2 nights ago with rum instead of tequila and it, too, was very good.

Just made a batch using exact recipe. It is the PERFECT poolside drink! The watermelon and lime juice are refreshing and not too sweet, and the hint of salt makes it addictive - tequila and salt - a marriage made in heaven! Pour over a tall glass of ice and enjoy!
