  • Combine shallots and tarragon vinegar in a small bowl; let stand 10 minutes. Add mayonnaise, mustard, and tarragon; stir well to combine. Reserve 3 tablespoons mayonnaise mixture. Add chicken to remaining mayonnaise mixture; stir well.
