How to Make It
Combine water, sugar, tamarind paste, and salt in a small saucepan over high. Bring to a boil, stirring until sugar dissolves. Remove from heat, and let cool slightly, about 20 minutes.
Process strawberries, mint, and 1/4 cup of the tamarind mixture in a blender until smooth; stir in remaining tamarind mixture. Pour into 10 (3-ounce) ice pop molds; freeze until solid, at least 4 hours.
