How to Make It

Heat oven to 500° F. Pour the oil into a baking pan, add the sweet potato, and toss to coat. Arrange the slices in a single layer and sprinkle with the salt. Roast until softened and browned, about 20 minutes.

Meanwhile, melt the butter in a large skillet over medium-low heat. Add the bread crumbs and toast until golden. Add in the Parmesan, potato, and a few grinds of pepper; toss to coat. Return to the baking pan. Place in oven and bake until the cheese bubbles, about 3 minutes. Add salt to taste.

I never liked sweet potatoes, but I really liked this. It could be for everyday or a special occasion. If you preheat the oven, check the potates after 15,minutes. Mine were pretty well done after 20 minutes without preheating. I toasted the crumbs on medium and when I added the cheese it melted together instantly before the potates were in, so I'll put the potatoes in the crumbs before the cheese next time. I served it with french country chicken breasts and green beans with toasted almonds. Will make again.
