1 tablespoon sugar
3 tablespoons fresh lemon juice
2 teaspoons canola oil
4 cups packed baby spinach and spring greens mix
1 firm pear, thinly sliced
1/2 cup sliced red onion
1/4 cup torn fresh mint leaves
How to Make It
Combine first 3 ingredients in a large bowl, stirring with a whisk. Add greens mix and remaining ingredients; toss well. Serve immediately.

We absolutely LOVE this salad. I double the dressing recipe so I can use it on my lunch salad. I also used a Granny Smith apple as I couldn't find any firm-ripe pears. This salad has a spring-fresh taste and complemented tonight's grilled salmon perfectly.
