This is in regular rotation at my house.I usually make with half turkey and half beef. I always sauté the onions. Now the kids know how to make it too; so easy so tasty. Love the muffin portion size!

The first time I made them I accidentally mixed ALL of the ketchup instead of half, so I ended up using half the mixture in the meat and half in the pan and it came out awesome! The second time I mixed it that way on purpose and replaced half of the bread crumbs with quick oats, healthier. This time I may use only the oats and completely omit the crumbs. We love meatloaf so I'm always trying to make it a little healthier while keeping it delish. Thanks for such a fantastic recipe! The 20 minute cook time makes this tasty dinner even better.

Read MoreMy husband and I really enjoyed this even with halving the recipe. It was super easy to put together and perfect for a weeknight meal. We will definitely make again. I'll second bobbo605: put a cookie sheet under the tin. I cooked ours in a 6-muffin tin and cooked in our toaster oven (cooked thoroughly in 20 minutes) but the greasy runoff will be a pain to clean!

Read MoreGreat recipe! I add a bit more bread (instead of crumbs) that I tear up very small- it's just a personal preference. It takes a bit longer in the oven to cook as well. But when it comes out, it's delicious! Me and my husband have made this over and over, and has earned a place in our go to recipe book. Wonderful served with red mashed potatoes!

Read MoreThis wasn't the best meatloaf I've ever made (that credit goes to Cook's Illustrated) but it was quick and my kids absolutely gobbled it up. I sautee'd the onions a little as I don't care to bite into crunchy onions in any dish. I also added a couple tbsp of brown sugar and an extra egg to the mixture, as well as extra ketchup. The flavor was good, it was well-liked by my pseudo-gourmet kids, and I'm sure the kids I teach cooking classes to will enjoy them as well! Place muffin tin on a cookie sheet to catch greasy runoff, or form into balls and bake on a broiler pan.
