How to Make It

In a small bowl, whisk vinegar, oil, soy sauce and wasabi. Fold in avocado. In a medium bowl, toss rice, spinach, tuna, cucumber and scallions. Gently fold in avocado mixture and dressing. Season with salt and pepper, if desired.

Loved this unexpected find. Left out the Wasabi as I was sharing with my 4 y.o. and husband and we ate every last bite! We're going to have this, again.
