The toppings of sun-dried tomatoes and sliced fresh basil add more flavor and a pretty appearance to this chicken recipe. Here's the trick to softening the texture of sun-dried tomatoes: Buy them packed in oil, and then drain and rinse in hot water to remove oil. Chop tomatoes with a knife, or snip them into smaller pieces with kitchen shears.

How to Make It

Step 1

Arrange chicken pieces in a single layer in a lightly greased 13- x 9-inch baking dish. Pour dressing evenly over chicken pieces, and sprinkle with ground pepper.

Step 2

Bake, uncovered, at 400° for 1 hour or until done, basting every 15 minutes. Sprinkle baked chicken with desired toppings.

Step 3

Note: For testing purposes only, we used Good Seasons Sun Dried Tomato Vinaigrette With Roasted Red Pepper dressing.

Step 4

Sun-dried Tomato Chicken Breasts: Substitute 6 skinned and boned chicken breasts for chicken pieces. Prepare recipe as directed, decreasing bake time to 30 minutes.

LOVE this recipe. My dad actually said it was his favorite meal, ever. I did "up" the amount of basil and sun dried tomatoes, as well as add goat cheese, which I would highly recommend. I make it with chicken breast tenders, so they're teeny and so moist and delish. I marinate if possible, too, as I think it makes it juicier and tastier. HIGHLY recommend. Everyone from 2 year old to 58 year old loved it!

Quick and easy. I marinated the chicken in the dressing for 2 hours and poured unused marinade over before baking. Used boneless chicken thighs and baked 400 degrees 30 minutes.Sprinkled on top a little shredded Pecorino or Fontina cheese last 5 minutes of baking. Used a lot of sun dried tomato on the top, fresh parsley and basil.

Simple and tasty. We don't usually like chicken on the bone so used boneless which were fine. Added some red chili flakes for a bit of a kick and the family really enjoyed it. Served with orzo and steamed broccoli. will definitely make again.

Very yummy. I made with chicken breasts only and sprinkled some mozzarella cheese on for the last few minutes of baking. Served with Betty Crocker butter mashed potatoes and green beans. Definately will make again.

I have made this twice, and love how easy it is to make. I serve it with couscous and top the chicken with the remaing sauce. Took someones suggestion and topped with slices of red peppers and covered with foil to keep them from burning. Fabu! Ready in about 35min and my 2 yr old son loves it! What could be better.

This recipe is so easy. It's perfect for a quick weeknight dinner. I made it without the sun-dried tomatoes and fresh basil (I subbed a sprinkling of dried basil), and it was still great. The last time I made it, I placed fresh red pepper strips over the chicken to roast, and they added a tasty sweetness that everyone enjoyed. My family is a huge fan of peppers, so that will be a permanent addition to the recipe for me. I served it with mashed potatoes and sauteed squash ribbons. Everything but the squash was a hit. Keep a bottle of the dressing in your pantry in case you need a quick dinner.
