Yield:
3 1/2 cups (serving size: 2 tablespoons)

Serve these pecans as a snack, or add them to mixed greens tossed in a vinaigrette and topped with goat cheese.

How to Make It

Step 1

Combine first 4 ingredients in a medium saucepan. Cook over medium heat until sugar dissolves, stirring constantly (about 8 minutes). Add pecans and vanilla; cook until all syrup is absorbed and pecans are coated, stirring constantly (about 12 minutes). Spread pecan mixture on a baking sheet coated with cooking spray. (Pecans will have a sugar coating.) Separate pecans into halves. Cool completely.

Step 2

NOTE: Store in an airtight container in a cool, dark place for up to one month; in the refrigerator for up to 3 months; or in the freezer for up to 8 months.

This is a family favorite. I tried to skip a year, not to be so! This recipe is easy, works everytime and has created a holiday tradition!

Ooh these are good! Just what I was expecting, although I expected to roll them in sugar rather than cook a syrup down. In any case, these are delicious - would make a nice holiday gift or snack. I prepared this exactly according to the directions.

Such an easy recipe! Like others have said it does take some stirring (about 25 min) but it's well worth it! I'll probably double the batch next time, too. I made them & plan to freeze them so they are ready for Thanksgiving!
