1/2 teaspoon salt
2 teaspoons sugar
How to Make It
Preheat oven to 400°.
Combine first 4 ingredients in a blender, and process just until blended. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, 1 1/4 cups sugar, baking powder, and salt. Add strawberry mixture to flour mixture, stirring just until moist. Spoon batter into 12 muffin cups coated with cooking spray. Sprinkle with 2 teaspoons sugar. Bake at 400° for 20 minutes or until muffins spring back when touched lightly in center. Remove from pan immediately.
These muffins did taste good, but I did not like how they baked. I'm not sure if it was the sugar or not but they just didn't look right on the top. That said, I probably wouldn't make these again and will try to find a better recipe.
Delicious, but I did make a few changes. I smashed the strawberries and then mixed them with the additional ingredients, I used one cup sugar and replaced 1/2 cup of flour with whole wheat flour. My kids loved them.
