How to Make It

Bring broth to a boil; reduce heat to a simmer. Slowly add egg, stirring constantly, until egg forms lacy strands. Immediately remove from heat. Let stand 1 minute. Stir in soy sauce, sugar, and green onions. Place spinach in bowls; ladle soup over spinach. Serve immediately.

I have made this soup several times. We add mushrooms and a dash of sesame oil and a bit of chile-garlic sauce for heat. We served this with pot stickers and fried rice. My daughter actually requests this menu as her "last meal" before college.

My husband and I lived this! I added chicken for added protein and hot sauce for a little spicy flavor. I had something like this recently at the Mayo Clinic in Rochester, MN and tried to find a similar recipe on-line. I would definitely make again!
