How to Make It

Step 1

Combine first 7 ingredients in a bowl; stir well with a whisk. Set aside.

Step 2

Combine spinach and remaining ingredients in a large bowl. Drizzle dressing over salad, and toss gently to coat. Serve immediately.

this is a fantastic recipe--refreshing, light. i have made it many times over the years, and it always get raves. am going to make it tomorrow again for a 4th of july bbq--and expect to get good reviews again. the recipe has a good balance of flavors and textures. the tarragon pairs so well with the watermelon. yum! oh--i often don't follow recipes to the "t", but this is one that i think benefits from good measurements, etc, and doesn't need any tinkering.
