  • Heat olive oil in a nonstick skillet on medium heat. Rinse and chop tomato, green onion and jalapeno and sauté for 4-5 minutes. Add egg whites to skillet, stir once and let cook without stirring for 2-3 minutes to set, then scramble until done. Serve.
