This seafood dish is packed with flavor and because shrimp cooks fast, this recipe is a great weeknight option. If you don't want the peanut noodles too spicy, start with only 1 teaspoon chile paste. If the sauce is too thick, thin it with a little water--it should be the consistency of unwhipped cream.

How to Make It

Step 1

To prepare sauce, combine the first 6 ingredients and 1/4 teaspoon salt; stir with a whisk.

Step 2

To prepare the shrimp, toss with 1/4 teaspoon salt. Sauté in nonstick skillet coat ed with cooking spray over medium-high heat for 3 minutes on each side or until done.

Step 3

To prepare pasta, combine peanut sauce, shrimp, noodles, bell pepper, cucumber, and onions in a large bowl; toss well. Sprinkle with chopped peanuts and cilantro. Serve with lime wedges, if desired.

quick and easy! very flavorful! I add crushed garlic and a splash of fish sauce instead of salt, reduced fat crunchy pb and use only add 1-2 TBSP water ~ Delicious

Put this together in 45 minutes, start to finish, even with frozen shrimp. I sautéed the red pepper before adding the shrimp but otherwise followed the recipe. The peanut sauce is rich and satisfying so don't forget the squeeze of lime for freshness.

Always a huge crowd pleaser. Delicious flavors. Very easy to make. I use whole wheat linguini to make it healthier, but Udon noodles make it taste the best.

Love, Love, Love this recipe! Anytime I get that hankering for a spicy peanutty sauce - this is my go to! I usually add a little more spice and also some chicken with the shrimp and veggies.

I've been making this recipe since '03 regularly. It is fast, easy and delicious and everyone I've ever served it to has raved about it. I use 2 teasp. chili paste and often just crunchy peanut butter. Otherwise I don't change a thing. It's perfect. I rarely serve it with anything as it is satisfying and nutritious on it's own.
