I've been making these for years; it's especially quick because I don't peel the potatoes.
This was a hit at a brunch for my in-laws on Mother's day. Very easy to make. The potatoes were nice and crispy, not mushy and greasy like at some restaurants. They also had a very subtle kick to them. Will be making this again, for sure!
