Yield
4 servings (serving size: 3 ounces chicken and about 1/3 cup sauce)

Slather on this smoky, citrus-infused sauce during the last half of the cooking time to avoid charring.

How to Make It

Step 1

Prepare grill.

Step 2

Combine the first 3 ingredients in a small bowl. Rub both sides of chicken with the spice mixture. Place chicken on grill rack coated with cooking spray; cover and grill 6 minutes.

Step 3

Uncover the chicken, and brush with 1/2 cup Orange-Chipotle Sauce; cook for 6 minutes or until done, turning once. Serve with remaining sauce.

Step 4

Totals include Orange-Chipotle Sauce.

Very good...BUT...when brushing the sauce on the chicken, make sure the seeds are seared on both sides, otherwise, the sauce just brushes them off. I'd recommend grilling them at 3 minutes per side to sear the seeds on, then brush the sauce on and finish cooking. Also, since there is a good deal of sugar in the sauce, this might be best done as with a hot side and cool side grill, using the hot side for high heat searing and the cooler side for indirect grilling once the sauce has been applied. This was really good when served with chipotle cheddar mashed potatoes.

This has really good flavor but it is way too spicy. My husband and I love spicy things but it was just insanely hot. I will make it again but with only 1T of chipotle instead of 2!
