1 red onion, chopped
12 oz. chicken sausages
4 sprays of nonstick cooking spray
1 fresh mango, cut into chunks
1 yellow pepper, cut into chunks
2 tsp. jerk seasoning
14 oz. can chopped tomatoes
1 vegetable stock cube
How to Make It
Heat oven to 400°F. Arrange onion and sausages on baking sheet, and coat with cooking spray. Roast for 10 mins. Toss in next three ingredients. Roast for 10 mins.
Mix in tomatoes, stock cube, and 1 cup water with sausages. Return to oven for 15 mins. Cool completely before freezing individual portions.
