I made this and while I'm not completely blown away, I do see some potential. The flavor was a bit lacking. It might benefit from the addition of a small pinch of salt. Some cherry brandy in the mix might also be nice. I'll have to experiment with that. The brown color in parts of mine came from the cherry juice, so if you make it, you might want to wash off your cherries and make sure they are dry. Be sure to not let it gel too much between pouring the layers, or they won't stick together. Give it a go.
This recipe tastes good, but it's a very strange color. It is not white as the picture shows, but a funny gray-beige color because of the spices in it. My husband said it looked like gravy. If I made it again (doubtful) I would reduce the cinnamon because it overpowers the coconut milk. It tasted like a cinnamon roll.
