A long steep draws out the deeper flavors of the tea; take care not to squeeze the tea bags to avoid making the granita bitter. Garnish the granita with lemon or mint sprigs, if desired.
Bring 3 cups water to a boil in a medium saucepan; remove from heat. Add tea bags; cover and steep 10 minutes.
Remove and discard tea bags. Add sugar, stirring until dissolved. Add lemon juice and honey, stirring until honey dissolves. Place pan in a large ice-filled bowl for 5 minutes or until cool, stirring occasionally.
Pour tea mixture into an 11 x 7-inch glass or ceramic baking dish. Cover and freeze until partially frozen (about 1 hour). Scrape with a fork, crushing any lumps. Freeze, scraping with a fork every 30 minutes, 1 hour or until completely frozen.
