Sauté onion in 1 tablespoon hot vegetable oil over medium heat 8 minutes or until tender.
Stir together onion, hash browns, salt, and pepper in a large bowl.
Heat 1 tablespoon oil in a large non-stick skillet over medium-high heat. Drop hash brown mixture into 3 1/2-inch rounds. Cook, in batches, 5 minutes on each side, or until lightly browned, adding remaining oil as necessary. Press down with a spatula to flatten; top each round with a cheese slice. Cook 5 minutes.
I think the recipe name is a little misleading. Not that I have any problem with hash browns with a slice of cheese on top, but smothered this is not! PS.. try making hash browns then set on an oven safe plate, top with stokes brand pork green chili, shredded cheddar and stick it under the broiler till the cheese is melted and the green chili heated through. Quick smothered hash browns!!
This is a fine recipe - a recipe is instructions on how to prepare food which this one does. Is everyone aware that they are welcome to ignore recipes for foods they have no interest in eating and/or preparing....? For those who wish they read recipes closer with a more discerning eye, I often wish they did this very thing for reviews; I have seen many more rank reviews than recipes on this site.
The negative reviews are sad. I just sent this recipe to my husband to print off and can't wait to try it. What are a few extra steps, if you have the time to do them. If you don't, then don't complain. We are both disabled, and have a very low income, so the potatoes we get from our Food Bank each month, will work great in this recipe. To all that gave positive feed backs, thanks for starting our New Year on a great note. We hope your New Year will be as bright as your attitude.
