These pimiento cheese sandwiches make a quick and easy appetizer that's appealing for any shower or party.

How to Make It

Step 1

Stir together cream cheese and next 3 ingredients in a large bowl until blended. Stir in shredded cheeses and sun-dried tomatoes until combined.

Step 2

Spread cheese mixture on half of bread slices (about 1/3 cup on each); top with remaining bread slices.

These were fantastic! Even my picky "I love meat" daughter really liked them. They are easy to make, and we had ours on pumpernickel, but I bet they would also be good on a crusty Italian bread or a stiff cracker. I could not find smoked cheddar (so had to use sharp cheddar), but I used smoked Gouda and smoked paprika.

My daughter-in-law and I used this recipe for a Wedding Shower Open House for my granddaughter Aug. 4. Couldn't have been happier!!! It was a hit and my guy and the others loved the left overs (little as it was. ) Will be making it again soon. Will be great for fall We did the finger sandwiches like suggested and added just a little more mayo . for easier spreading. Thanks.

Excellent recipe. Like the other reviewer, I used regular sharp cheddar instead of the smoked cheddar. Otherwise, I followed the recipe exactly as written.

This was a great recipe. Took it for our Girls weekend at the beach and it was a hit. Used white sharp cheddar instead of a smoked cheddar to keep it from being too smokey and it was great.
