How to Make It

Step 1

Preheat broiler to high. Combine egg whites, eggs, salt, pepper, and milk; stir with a whisk.

Step 2

Heat a 9-inch cast-iron skillet over ­medium heat.

Step 3

Layer in onion, dill, chives, and salmon.

Step 4

Sprinkle with diced cream cheese.

Step 5

Carefully pour egg mixture over cheese. Cook over medium heat 5 to 6 ­minutes or until eggs are partially set; then broil 5 inches from heat for 2 to 3 minutes or until browned and almost set. Serve with lemon.

We have some dear friends who give us wonderful smoked salmon every year and this recipe is a great way to use some of it up.  I would think some capers would also be a nice addition.  FWIW, I omit the dill and exchange the cream cheese for cheddar on 1/4 of it else my daughter wouldn't eat it.  Nice that you can alter it pretty easily to individual tastes.  My only complaint is that it stuck to my non-stick pan on the bottom.  Next time a thin coating of olive oil before adding the ingredients to the pan.  Cook time for me was 8 minutes on the stove top and 3 under the broiler.

I doubled the recipe for a small group of friends for brunch this morning. It was absolutely delicious and got rave reviews from a picky eater. To make it even easier, I prepped the egg mixture last night. The salt from the salmon was perfectly balanced against the savory eggs. Also, I used 2% because that's what my toddler drinks, as well as dried dill because that's what was in the house. I would definitely make it again for any occasion!
