Smoked Gouda and Penne Pasta Salad
Talk to the folks at your local cheese counter about finding good smoked Gouda. There are some processed cheeses that look the part but lack the intense flavor.

I took this to a potluck party last night and got numerous good reviews, a request for the recipe, and overall a big thumbs up. Would definitely make again! Next time I may want to mix in a bit of the oil from the sun dried tomatoes for even more flavor, but it was good as is!
Taking this to friend's family for dinner tonight! It's simple to make and sooooo good! Used Trader Joe's organic brown rice pasta- first for me! Already scouting my calendar for the next 'take along' event: Slow Food Potluck, Deer Valley concert, Sun Valley getaway, and more along the way! Thanks!!
The pasta tasted kinda bland. Definitely better on day 2. I will try it again with tweeks.
really good, we too substituted the mayo for the oil from the jar of sun dried tomatos and it was great. we did make the mistake and not let the pasta cool before adding cheese, so it melted and got a bit lumpy.... mmhhhh lumpy cheesy pasta! Super easy to make, quick and tasty!
Good recipe, but instead of using mayonnaise I reserved the oil from the jar of sun dried tomatoes and mixed that into the pasta. I took this to a holiday pot-luck and it was devoured. Will definitely make again!
This was very easy and suprisingly delicious. The garlic did not seem like enough seasoning however once mixed with the sundried tomatoes, smoked gouda and arugula it was perfect. I did dice 1/2 of the garlic clove and add it plus added 1/2 cup mayonnaise which seemed to still turn out a wonderful product. Took it to the office today and not one bite was left. Give this a try instead of your potato salad this summer.
