Slushy Watermelon Mojitos
The classic Cuban mojito cocktail is the inspiration for this ruby-hued watermelon version. Be sure to keep the limeade frozen so the beverage will be slushy.

I have made these drinks a few times since they were first published in CL.....YUMMY! If you like watermelon and mint you will love these...
Umm, just wow! These have become our favorite drink since making them on the 4th of July. I sliced up and froze an entire watermelon and kept the extra in the freezer, as that is the most time-consuming part of making these. My girlfriend grows mint in her yard and always brings some over. Now, making these is just a couple minutes away.
Great refreshing summer drink! The hardest thing is to cut up the watermelon so its easy to make. I like mine really slushy so make sure the limeade is frozen when you put it in the blender. You can use the rum or sparkling water to thin it down if needed.
Delicious and refreshing....not an overwhelming strong watermelon flavor - but it is there. I didn't have white rum, so used Barbancourt (from Haiti). These were the hit of a recent cookout party - everyone who tried one asked for the recipe. Assembles quickly and easily for entertaining, since the watermelon prep has to be done 2 hours prior. Will definitely make again!
This drink is a real keeper! Everyone loves it - it's so cool and refreshing on a hot summer day. I find I have to add extra sparkling water so it blends more easily, otherwise my blender (it's 32 years old)doesn't process it smoothly. For the virgin variety, I substitute a little rum extract for the white rum. Since my drink is thicker than the photo shows, I serve it with a "straw spoon" so people can stir and sip to enjoy every last drop of this liquid refreshment. ;-)
Delicious and refreshing. I made some without the rum for my teenagers and they liked it also. I froze what we didn't drink and am hoping it tastes just as good as it did the first time.
I served this delicious drink at our Memorial Day cookout, and it got rave reviews. It is sweet and refreshing. I made according to recipe; used a little more sparkling water and rum than called for per batch. The frozen watermelon breaks down well in the blender, so the drink is smooth. Also tastes great without the alcohol.
This is my absolute favorite summer drink. Even my friends and family who do not like watermelon love them. Delicious!!!
