This was okay, but I think it was my mistakes, not the recipe! I wanted to add more fish to our rotation so got one large cod filet to use when I was the only one home for dinner, and I used too much salt. I also made my own Italian breadcrumbs by throwing a good piece of bread in the food processor with dried herbs, and used too much rosemary, so it was too strong-tasting and salty. The fish itself was fine, if very bland, and the onion/red pepper sautéed veggies with balsamic and raisins were wonderful. I would try again, but I was glad I was the only one eating this dish this time - I'll keep practicing cooking fish and would try this again, just be careful with the salt! Cooking time of 12-13 minutes was fine, I had a thick filet.
This turned out better than I expected. I made this for guests one of whom is Sicilian. They seemed to like it. Because the fillets were not all the same thickness, I tucked under the thinner parts to compensate. I also cooked it for 10 minutes which was just right. I used regular home-made bread crumbs.
Good, and so easy. 12 minute bake time was perfect for my fish. I did find the fish a little salty, and next time would hold the salt if using the Italian breadcrumbs.
This dish was very easy to make and tastes great! I didn't change any of the ingredients and served it with white rice and a salad. I will definitely make it again.
Flavorful and simple dish. I substituted tilapia and it turned out great. Served over orzo with roasted asparagus for an easy weeknight meal.
Quick, easy and very, very good. We had fresh cod, much larger than the recommended fillets, about 2" thick. The fish would have been terribly overcooked if we'd followed the 12-minute guide. Served with CL's linguine with garlic and red pepper. A back-to-the-1990s dinner!
followed the recipe exactly and Dh & I both loved it...this is a keeper and DH hates raisins...this is so good it almost like going to a fancy restaurant I served roasted potatoes and a salad. It also was very quick and easy to make great for weeknights
