Liked this very, very much- used plain yogurt instead of sour cream and larger, paper thin flour tortillas and folded them into burritos. Only change I'll make next time is to mix the onion into the sour cream/yogurt and maybe even the shrimp to hold it all together. Served with a side of lemony rice. AGree with SaraBrown that the shrimp would be nice grilled, too.
These are so easy and delicious! The shrimp would be great skewered, and cooked on the grill. Never thought of adding lime to sour cream (we used fat free- still terrific!). We'll definitely make this again. We made a simple Tex Mex Coleslaw to go with it, along with some mashed black beans. We used 1 1/2 lbs of shrimp, and increased the recipe to be sure we had enough (although we didn't need to, there was plenty...craving tomorrow's leftovers!) Also, we used low carb flour tortillas.
