Shrimp scampi is often served over rice or pasta, but the flavors of the shrimp, garlic, and lemon juice are more pronounced when you serve the dish without the starch.
1 1/2 tablespoons olive oil
1 1/2 tablespoons bottled minced garlic
1 1/2 pounds peeled and deveined large shrimp
1/4 cup finely chopped fresh flat-leaf parsley
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/8 teaspoon ground red pepper
How to Make It
Heat oil in a large nonstick skillet over medium-low heat; add garlic, and cook 1 minute. Add shrimp, and cook 5 minutes or until shrimp turn pink, stirring occasionally; remove from heat. Stir in parsley and remaining ingredients.
