Great recipe but I did deviate a wee bit. As a person who makes hoppin' john frequently, the ratio of rice to peas seemed off, so I instinctively cooked 1 c of raw rice yielding 2 c cooked. I put in the one cup cooked and immediately added the rest. So, for me it should read '1 cup of rice, cooked'. Big difference, but just my opinion.
Also, I had no basil this time of year in my garden but did have mint and oregano and so I put equal parts of these herbs and it was quite good. I'll use basil next time.
And I had about 3/4 of onion already chopped so I subbed that despite having shallots on hand. Again, I use plenty of onion when I make hoppin' john, so no stretch.
Also, my personal feeling... you could do with 1 1/2 pounds of shrimp for 4 people. (It makes a lot...maybe my added rice was the reason, there.)
Finally, the jalapeno adds flavor but little heat, so I served it with Tabasco on the side.
All in all...a spectacular taste sensation and worthy of repeat.
This recipe is delicious! My entire family loved it. I prefer to use Jasmine rice in this recipe. It works perfectly. --It is great in the summer as a side or to eat on New Years Day.
Excellent recipe! Enjoyed it for New Year's Day and my husband requested we add this into our meals throughout the year. Good enough for company :)
I cut the recipe in half for my husband and I. It was AWESOME. We couldn't wait for it to chill, so we ate warm....fantastic! Just wish I made the full recipe, leftovers would have been great. Easy to make.
Great combo of flavors, significantly different from our everyday menu. Goes great with fried fish or hot links or just on its own as a lunch
