4 servings (serving size: 1 chicken breast half and 1/4 cup avocado mixture)

How to Make It

Step 1

Sprinkle seasoning on both sides of chicken. Heat oil in a large nonstick skillet over high heat. Add chicken to pan, smooth side down; cook 1 minute or until seared. Reduce heat to medium; cook 3 minutes on each side or until lightly browned.

Step 2

Combine avocado, cilantro, pepper, lime juice, and salt. Squeeze one-fourth lime over each piece of chicken before serving. Serve with avocado mixture.

Great combination of flavors! Used the Spicy Seasoning (from another cooking light recipe) as suggested from other reviewer, and served with a side salad. Great meal!! And the Spicy seasoning wasn't spicy in my opinion, but still was a great pair.

Easy & delicious. I made my own blackened seasoning from another recipe on this site, Cooking Light's "Spicy Seasoning" (which I've used in many recipes - it's fantastic). Served with a simple side salad. YUM!

This is one of my go-to meals. I use frozen boneless, skinless breasts and pound the chicken after defrosting in the microwave so it cooks evenly. It is good with or without the jalepeno. Pairs well with steamed broccoli or asparagus and a small side of pasta, orzo, quinoa or wheatberries.
