This Sautéed Squash and Zucchini recipe makes a quick and easy side dish that is sure to be a hit with the entire family.
2 medium-size yellow squash
2 medium-size zucchini
1 small onion
1 tablespoon hot oil
1 minced garlic clove
salt and pepper
How to Make It
Cut 2 medium-size yellow squash and 2 medium-size zucchini into 1/4-inch-thick slices, and chop 1 small onion. Sauté vegetables in 1 tablespoon hot oil in a large skillet over medium-high heat 5 minutes. Add 1 minced garlic clove, and sauté 1 minute. Sprinkle mixture with salt and pepper to taste.
Follow the recipe as above - but put into a microwaveable bowl. Sprinkle a little bit of olive oil on top and then microwave for 2-1/2 - 3 minutes. Sprinkle about 1 tablespoon of Parmesan cheese on top and serve. Yum - and really quick too. Also clean up is quick and easy if you use a Dixie paper bowl - you throw it away when finished.
